Fireweed (Epilobium spp.) is often regarded as a weed and either ignored or destroyed. Few realize how effective this plant is as a natural food source and healing agent. It has been used to make fishing nets and cords, as a waterproof for hides, and the fluffy down is used for padding in bedding and clothing. Preparing Fireweed as a Natural Food
Fireweed is a good source of vitamins A and C. It has a high beta-carotene level. The spring shoots are often collected and prepared similarly to how you would cook asparagus. The leaves are eaten raw and cooked. They taste better in the spring as they are not quite as bitter. Due to the fact that they can be bitter, they can be added to salads or boiled as you would spinach. I like to boil mine with garlic, and then add balsamic vinegar and olive oil after they are done. The flowers can be added to salads, bringing a little color to the meal. The stem's pitch can be used to help thicken up soups and stews.
